Hoppy Easter!

we had a (much needed) nice, long 3 day weekend! it was pretty busy, but lots of fun.

it all started thursday night when we had a wine tasting party after work for our residents. i found out WAY more than i needed to about several of them... i will spare you the details. then, on friday, i finished a book by my favorite author, Karen Kingsbury (she is THE best) called "This Side of Heaven."

read it.

then, i needed to get my lazy butt off the couch, so i chopped up 8 apples, made some caramel dipping sauce (i could NOT wait to try it) and baked some super cute cupcakes to bring to our Easter lunch:

they look like spring and that makes me happy


here's what i used:

i baked up some strawberry cupcakes and then iced them with strawberry icing:




then i cut a bunch of strawberry marshmallows (which didn't even taste like strawberry) into slices and added sprinkles- the mallows are sticky when you cut them so the sprinkles stick


then i laid them into a pretty flower shape on top of the cupcakes... and, tada!


on saturday, i picked up mom and we headed to target! no, not for me. for a baby shower that afternoon. we got some super cute girlie things and had a nice time catching up with everyone at the shower that we hadn't seen in a while.

after the shower, ryan and i headed to meet his parents and brother for church in rockwall. after service, we went to gloria's on the lake for dinner where the conversation was good and the food was subpar.

sunday was Easter!

we went to church with mom and britt, and then to marsha's for lunch.

*funny side story about that caramel sauce- first off, it took SO long to make. literally, i had to eat dinner with one hand because i could not stop stirring it on med. heat for an hour! never doing that again. then, after church on sunday, we were sneaking into our cupcake stash before heading to marsha's for lunch, and guess what we found oozing out of the container all over ryan's floor board... yep. it was that damn caramel sauce. the hour-long-bicep-work-out-carmel-sauce. so after ALL that, i never even got to taste it! ugh...

  1. Those are probably the cutest Easter cupcakes I have ever seen. And I love the caramel dipping sauce story!

  2. Next time remember to boil a can of unopen eagle brand milk in a sauce pan for 30 min - 45 mins and you'll have the best carmel sauce ever. Wish we would of gotten more pictures....
